Here's how to master grilled baked potatoes—crispy on the outside, fluffy on the inside, and ready to load with all your favorite toppings.
Large russet potatoes (cleaned and dried)
Olive oil or melted butter
Kosher salt
Aluminum foil
Your favorite toppings (sour cream, shredded cheese, chives, bacon bits, etc.)
Scrub your potatoes well and dry them completely. Use a fork to poke several holes into each potato to let steam escape while they cook.
Rub each potato with olive oil or melted butter, then sprinkle with kosher salt. This gives you that crispy, flavorful skin everyone fights over.
Wrap each potato individually in aluminum foil. This protects them from burning and helps them cook evenly. For extra flavor, you can tuck in a sprig of rosemary or a clove of garlic inside the foil.
Place your foil-wrapped potatoes on the grill over indirect heat (about 375°F to 400°F). Close the lid and cook for 45–60 minutes, turning occasionally. They're done when you can squeeze them gently (with tongs!) and they give easily.
If you like a crispier skin, remove the foil for the last 5–10 minutes of cooking and place the potatoes directly on the grill grates.
